Grandpa Detro's Buttermilk Pancakes

2 eggs

2 c. buttermilk

1/4 c. oil

2 C. flour

2 T. sugar

2 tsp. baking powder

1 tsp soda

1 tsp salt

Sour Dough Waffles

1/2 cup warm water
1 T. sugar
2 1/4 t. yeast
Combine  and let foam in large bowl.

2 c. milk (warmed)
1/4 c. butter
1 t. salt
Stir this in to yeast mixture.

2 c. flour, beat into above and wrap bowl tightly and let sit  overnight on counter.

In morning:  preheat waffle iron

 Add 2 large eggs slightly beaten,
2 t. vanilla
1/4 t. baking soda

Add to batter and cook.
If you want to make more use a second bowl.

German Pancakes

 Oven 400 degrees
 Put 1/4 cup butter in 9X13 pan and let melt.

In bowl add 6 eggs
1 cup flour
1 cup milk
1  t vanilla

Mix together and pour in pan with melted butter and bake 400 degrees for 20 minutes or until golden brown.

One hour cinnamon rolls




1.  In mixer or large bowl combine:
-2 ¾ cups flour
- ¼ cup sugar
-2 ¼ tsp yeast (or 1 pkg instant (quick rise))
-1 tsp salt

2.  In microwave safe bowl combine:
-4 Tbsp butter
-1/2 c water
-1/4 c whole milk


3. 1 egg



Heat butter, milk, & water mixture in microwave until mixture is hot and the butter is almost melted. Gradually add the milk mixture into the flour mixture. Add one egg and mix until a soft and sticky dough forms.  Preheat oven to 200 degrees. Mix on lowest speed for 4 minutes (or knead by hand on a lightly floured surface for 3-4 minutes).  Cover dough with plastic wrap and allow to rest on counter for 5 minutes.

Combine & mix cinnamon roll filling in small bowl:
cup brown sugar
1 Tbsp ground cinnamon
¾ tsp vanilla extract
¼ tsp almond extract (optional)
(Tip: add ½ Tbsp flour to help keep the filling in the roll instead of falling and sticking to the bottom of the pan.)

 ½ cube butter

After dough is finished resting, roll dough onto lightly floured surface until it measures a 16x9 inch rectangle. Spread ¼ c (½ stick) butter, room temperature on top of rolled dough, then sprinkle and spread filling on top of butter.  Tightly roll the dough and cut into 12 portions.  Dental floss work great for cutting dough. (Tip: cut in half, then fourths, etc… then your pieces will be uniform in size, there might be a few smaller ones from the ends, just arrange them in the pan around the larger rolls.)

Place rolls in a lightly greased 9x13 baking dish and gently press a piece of aluminum foil over top of rolls.  Turn off your oven and place covered rolls in oven to rise for 25 minutes. (Tip: If you live in a dry place (which we do), fill a separate 9x13 inch baking dish with boiling water and put on the lowest rack in your oven right before you let them rise. This will ensure that the rolls stay moist and elastic.  Keep the water in the oven until they are baked.)

Remove rolls from oven and turn oven to 375 degrees.  Once heated, remove the foil and bake the rolls for 15-18 minutes or until the centers are lightly golden brown in color.  Remove rolls and let cool for a few minutes before frosting.

Frosting:
1 ½ cups powdered sugar
¼ cup ( ½ stick) butter, melted
1 tsp vanilla extract
2-3 Tbsp milk
Combine all ingredients in small mixing bowl with hand mixer or beat by hand until smooth.  Spread over top of rolls.

4 egg whites whipped
1 C milk
1 C. flour
1/2  tsp salt
1/2 tsp vanilla
3 T melted butter
4 egg yolks

Rachel's Crepes




3 Eggs
2 Cups Milk
1 1/2 cups flour (1 1/3 for thinner)
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 cup oil or melted butter

Mix well and cook on greased skillet.
If too thin to handle thicken with a few more tablespoons of flour
Skillet must be medium to hot but not to hot

Nicole's Breakfast Cake

Topping:
1/ 4 c. softened butter
1/2 c. brown sugar
1 t. cinnamon
1 t. nutmeg
1 C. cereal (rice krispies)

Cake:
  2 1/2 C. flour (can use all prairie gold wheat(white wheat kernels))
  1 C. packed brown sugar
          1/2 t. salt
          1/2  C. softened butter
           2 t. baking powder
           1/2 t. baking soda
           1/2 t.  cinnamon
           1/ 2 t. nutmeg
            2 beaten eggs
          1 1/3 c. buttermilk or sour milk ( or put 1 and 1/3 T of vinegar or lemon juice and fill measuring cup with milk to make 1 1/3 cup)

Grease 9 X13 pan, set aside.  Combine flour, brown sugar, and salt, cut in butter till mixture is crumbly, take out 1/2 c. and set aside.  Stir baking powder, soda, cinnamon and nutmeg into remaining crumb mixture.
Combine eggs and buttermilk.  Add all at once to dry mixture; mix well.  Spoon into pan.  Combine topping with the 1/2 c. crumb mixture that was set aside. Mix and put over top of cake.  Bake 350 for 35 minutes

Joe's Belgium waffles


Makes 2 large waffles

4 eggs separated, Beat whites until stiff.

Put yolks in mixing bowl and add the following:
1 c. milk
1 c. flour
1/2 t. salt
1/2 t. vanilla
3 T. melted butter
Mix and then fold in egg whites.

Breakfast cake

2 C.    Bisquick
1/3 C. sugar
3/4 C.  milk
1         egg

Mix together and pour into a 9x9 pan.

Topping:

4 T.     butter
1/2 c.  brown sugar
1 t.      cinnamon
1 t.      nutmeg
1 1/2 c.rice krispies

Mix together and put on top of dough.  Bake 400 for 20 minutes or until done

Pumpkin Pancakes        Sterling Wall

1 cup pumpkin
2 cups milk
1 egg
2 tablespoons vegetable oil
2 cups flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon soda
1teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon salt
chocolate chips (opt.)

Mix liquid ingredients together. Add dry ingredients. Mix until moistened. Grease griddle. Cook at lower temperature than normal pancakes. Watch out--burn easily. Eat plain or with syrup. Enjoy!

whole wheat waffles

1 C. whole wheat waffle flour
3 t. baking powder
1/2 t. salt
2 t. sugar
2 eggs separated
1 1/4 c milk
1/4 c. oil
Beat egg whites and set aside.
Mix all other ingredient s together. batter will be thin. Let set for a minute or so then fold in beaten egg whites. Bake in preheated waffle iron.

Cinnabon Cinnamon Rolls

Ingredients: 1 (1/4 oz) package dry yeast 1 c warm milk 1/2 c sugar 1/3 c butter 1 tsp salt 2 eggs 4 c flour Filling: 1 c brown sugar 2 1/2 Tbs cinnamon 1/3 c butter (softened) Frosting: 8 Tbs Butter 1 1/2 c powdered sugar 1/4 c cream cheese 1/2 tsp vanilla 1/8 tsp salt Dissolve yeast in warm milk in large bowl. Add sugar, butter, salt, eggs, and flour, mix well. Knead the dough into a large ball, using your hands dusted lightly with flour. Put in a bowl, cover, and let rise in a warm place about 1 hr or until the dough has doubled in size. Roll the dough out on a lightly floured urface, until it is approx 21 inches long by 16 inches wide. It should be approx 1/4 thick. Preheat oven to 400 degrees. Make filling by combining the brown sugar and cinnamon in a bowl. Spread the butter over the dough and then sprinkle brown sugar/cinnamon mix evenly over dough. Working carefully, from the long edge, roll the dough down to the bottom edge. Cut the dough into 1 3/4 inch slices, and place in a lightly greased baking pan. Bake for 10 min or until light golden brown. Mix frosting and spread over cooled cinnamon rolls.

Horne Pancakes/Waffles

2 Egg Whites - beat till stiff- Set aside

Mix seperately:
2 C flour
1 Tbs Sugar
2 tsp baking powder
1 tsp soda
1 tsp salt

Then Add:
3 C Buttermilk
1/3 C Oil
2 Egg Yolks

Fold in Beaten Egg Whites

Sausage and Egg Breakfast

Ingredients:
1 lb country style sausage
Yellow Cheese
1 - 8 oz sour cream
1/2 tsp. salt
1/2 tsp. peppers
1/2 tsp. dry mustard
12 eggs
1 can diced green chilies

Directions:
Cook and drain sausage. Slice cheese thin and put on the bottom of a 9x13 inch pan. Sprinkle cooked sausage over the cheese. Mix sour cream, salt, pepper, and mustard together and spread over sausage. Beat eggs and pour over sour cream mixture. Sprinkle with grated cheese. Refrigerate overnight, covered with foil. Cook uncovered at 350 for 30-45 minutes. Serve with muffin, fruit, etc.
