Nicole's Pepper Steak Sandwiches

Sirloin tip roast ( I have used other cuts)
1 pkg of dry Italian Salad Dressing
1 cup water

Put in crock pot and cook all day.
1 hour before serving shred meat then add 1/2 jar of peperoncinis and liqud

Butter sub-buns, add slice of provolone or swiss cheese, put under broler until brown, add meat and enjoy.

hamburger in gravy

 Cook In a crock pot or oven or stove top on low and slow for 5 hours:

Make into patties:

1 1/2 lb ground beef
1 egg
1 onion chopped fine
1/4 c. bread crumbs
1 garlic clove minced
1/4 t. pepper

Put patties into pot.  Add:
6 oz mushrooms
1 1/2 c. beef broth
1 T. Dijon mustard
1 T. Ketchup
2 T. Corn starch
1/2 t. salt.
 Cook slow for 5 hours.
 Serve with mash potatoes or rice.

Nicole's pepper steak sandwiches

 In crock-pot put

1 Sirloin tip roast
1 pkt. Italian Dressing Mix-dry, sprinkle on top-dry
1 cup water

Cook all day.
1 1/2- 2  hour before eating- shred meat, then add 1/2 jar of pepper rings or peperoncini plus 1/2 jar of juice.  Cook 1 hour.

Take steak rolls, add provolone or swiss cheese and put under broiler until melted.  Spoon on meat and enjoy.

Chicken Dinner in Crock Pot

1 lb small red potatoes
1/2 lb carrots
1/4 c. olive oil
1/3 c. fresh squeezed lemon juice
1 t. oregano
1 t. onion powder
2 t. crushed garlic
1 t. salt
       pepper to taste
2 lb. chicken breast

Combine olive oil, lemon juice, then add spices to oil and stir.
In crock pot put chicken, potatoes, carrots,  then pour marinate over.  Bake 4 hours on high or 8 hours on low.    Enjoy

Gina's Sweet Pork

Gina's Sweet Pork

4-5 lb pork loin
Spray bottom of crockpot with cooking spray
 water and cook on low for 12 hours.  Drain water and add:
1 c. brown sugar
1 tsp.. cumin
20 oz Dr. Pepper, coke or peps
1 lg bottle of La Victoria Taco Sauce
Cook on low 2 more hours.
Remove fat.  Shred meat.  Cook for 2 additional  hours.
It will be a bit soupy but you use tongs to take the meat out

Crock Pot Funeral Potatoes

Crock pot funeral potatoes

2 small packages or 1 large package frozen potatoes
1 c. Sour cream
1/2 c. Chopped green onion (I used half this when I made them)
3 cans cream of chicken soup
1/4 c. Butter
2 c. Shredded cheese

Mix together, put in crock pot on low for 4 hours. Enjoy.

Yummy white sauce chicken for spagetthi or rice ( chicken stroganoff)

What You Need

2-3 chicken breasts
2 tbsp butter
1 packet  Italian salad dressing mix

1 box/ can  cream of chicken
8oz cream cheese


How To Make It

Cut up chicken and put in slower cooker with butter and dry Italian mix.  Cook on low for 4 hours or high for 2.  YES – that is all, do not put in the other ingredients yet.


About 45 minutes before time to eat mix in the cream of chicken and cream cheese.  Turn up to high and let it mix together.  Stir it and you are done!

You can serve it over  pasta and rice.

Cafe Rio



Café Rio Creamy Dressing:
1 pkg Ranch Dip Mix
1 1/3 Cups Sour Cream
3/4 Cup Mayo
1 Bunch Cilantro
4 Tbs Salsa Verde
2 Cloves Garlic
1/8 tsp Tabasco
Juice of 1 Lime
Blend in Blender

Pork Barbacoa
4-7 lbs Boneless pork roast
5- 8 oz cans tomato sauce
1/2 cup brown sugar
4 cups Dr. Pepper
3 tsp. Pressed Garlic Cloves (or garlic powder)
4 tsp. Cumin
2-4 Tbsp Molasses
Pepper (to taste)
Combine all ingredients in bowl and mix.
Put roast in crock pot and pour sauce over.  Cook on high 6-7 hours.  Shred meat, return to crock pot with sauce and cook on low 1 hour.

Cheesy Ham and Potatoe Casserole

1 to 1-1/2 lbs cubed ham
8 red potatoes, peeled and sliced
1 small onion, diced
2 cups grated cheddar
1 can cream of mushroom soup

Directions:Layer in this order: 1/2 ham, 1/2 potatoes, 1/2 cheese, all the onion, rest of ham, rest of potatoes, rest of cheese, pour soup on top.Cook on low heat 7-8 hours.

Crock Pot: cook on low 3-4 hours

Crockpot Mexican Chicken

4-5 chicken breasts
1 jar salsa
1 can black beans
1 can corn, drained
8 oz cream cheese

Serve over Rice

Put first four ingredients in crockpot on low for 4-6 hours and then addcream cheese about an hour before serving. Mix well, shred up chicken, andserve over rice. Enjoy!

Steak Soup

2-3 cups of water
1 can (14oz) tomatoes
1 to 2 onions chopped
1/2 tsp ground black pepper
1lb ground beef, coarsely ground or chuck roast finelydiced and drained
1/2 cup flour
2 carrots, sliced
1 package (10oz) frozen mixed vegetables
2 - 3 stalks celery chopped
2-4 tbs beef base
1/2 cup butter melted

Put all ingredients in crock pot except butter and flour.Cover and cook on LOW for 8 - 12 hours.Make a paste of melted butter and flour, stir until smooth.Pour into crock pot and stir until blended.

Bacon Ranch Chicken

4 boneless skinless chicken breasts
2 tbsp real bacon bits
1 tsp minced garlic
1 pkg ranch dressing mix
1 can cream of chicken soup
1 cup sour cream egg 
Noodles

Directions:Combine bacon, garlic, ranch dressing mix, soup, and sour cream; mix well. Pour over chicken in the slow cooker.Cook on high 3-4 hours.I then shred the chicken and put back in the pot and add the egg noodles; mix together

mexican Casserole

1 lb. ground beef (browned)
1 lb. grated cheese
1 can refried beans
1 can enchilada sauce (always use Rosarita brand)
2 flour tortillas
Grease dish. Put 1 tortilla on bottom, then a layer of refried beans, hamburger, cheese, and half of the enchilada sauce. Repeat layers again. Bake at 350 for 40 minutes. Chop lettuce olives and tomato wedges to serve with casserole.

Crockpot: Cook on low for 3-4 hours

Crock Pot Chicken w/Black Beans and Cream Cheese

Ingredients
4 -5 boneless chicken breasts
1 (15 1/2 ounce) cans black beans
1 (15 ounce) cans corn
1 (15 ounce) jars salsa, any kind
1 (8 ounce) packages cream cheese

DirectionsTake 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.Keep in crock pot on high for about 4-5 hours or until chicken is cooked.Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.All done and enjoy!

Taco Soup

1 lb ground beef (browned)
1 onion or 2 Tbsp dried onion
2-14 oz cans diced tomatoes
1-15oz can kidney beans
1-15oz can corn
2-Tbsp taco seasoning
2-8oz cans of tomato sauce
Place in Crockpot and cook on low for 3-4 hours

Crock Pot Cream Cheese Chicken

3 chicken breasts
1 (2/3 ounce) package Italian salad dressing mix
4 tablespoons melted butter ( divided)
1 small onion, chopped
2 garlic cloves, chopped
1 (10 1/2 ounce) cans cream of chicken soup
8 ounces cream cheese
1/2 cup chicken broth
1 cup frozen peas
DirectionsPlace chicken pieces in crock pot and sprinkle Italian seasoning over chicken. Sprinkle with 2 tablespoons melted butter.Cook on low for 4-6 hours.Melt 2 tablespoons butter in a sauce pan and saute onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth.Add this mixture and peas to crock pot and cook on low for an additional hour.

Spaghetti Sauce

1 lb Hamburger (browned)
2 Tbsp dried onion or 1 lg onion diced
1 quart diced tomatoes
2 sm cans tomato sauce
1 can tomato soup
2 tsp chili powder
1/2 tsp garlic powder
1 Tbsp sugar
1 tsp salt
1/4 tsp thyme
1/4 tsp basil
1/2 tsp oregano
Add all ingredients to crockpot and cook on low for 3-4 hours or high for 1-2.

Nacho Chicken Spaghetti

2 chicken breasts
1 can cream of chicken soup
1 14oz can of diced tomatoes
15oz jar or can of nacho sauce
2 cloves of garlic (pressed) or several shakes of garlic powder
salt and pepper to taste
Add all ingredients to crockpot and cook on low for 5-6 hours or high for 3-4.

Swiss Chicken

You will need: 4-5 Chicken Breasts
4-5 Pieces of Swiss Cheese
1 Can of Cream of Chicken
1/2 Cup of Milk
Bread Crumbs
Lay the chicken breasts in an oven safe dish.Cover each piece of chicken with a slice of swiss cheese.Mix the Cream of Chicken and milk and cover the chicken and cheese.Top with bread crumbs.Bake at 350 for an hour.Serve over rice.

Crockpot: Cook on low for 5-6 hours or high for 2-3

Creamy White Chili

1 lb Chicken (cut into ¼ in pieces)
¼ tsp Cayenne Pepper
1 medium Onion (cut in ¼ in pieces)
2 cans White Beans (drained)
1 ½ tsp Garlic Powder
1-14.5 oz can Chicken Broth
1 tsp Salt
1- 4 oz can Chopped Green Chilies
1 tsp Ground Cumin
¼ tsp Pepper
1 tsp Oregano

ADD JUST BEFORE SERVING
1 cup sour cream
½ cup Whipping Cream (or milk)

Sautee chicken, onions and garlic powder in oil until chicken is fully cooked. Add beans, broth, chilies and seasoning. Bring to a boil then reduce heat. Simmer uncovered for 30 minutes. Remove from heat and stir in sour cream and whipping cream. Garnish with cheese and chips.

Crockpot directions:Add one pound of precooked shredded chicken and all other ingredients except sour cream and whipping cream. Cook on low 4-6 hours OR high 2-3. Place Crockpot on warm and stir in sour cream and whipping cream. Garnish with cheese and chips.
