Ashlyn Holt's Insta Pot Mac & cheese

 In insta pot add:

4 C. chicken broth

16 oz. pkg, uncooked macaroni or other pasta

2T. Butter

1 tsp hot sauce (opt.)

1 tsp. garlic powder

1/2 tsp. pepper

1/2 tsp salt

Put lid on insta pot.  Cook on manual function high pressure for 5 minutes.  Do a quick release

Add 1/2- 1cup milk

Stir in2 c. shredded cheddar cheese

1 cup Shredded mozzarella cheese

1/2 c parmesan cheese

or use equivalent of any kind of cheese.  Add cheese by handfuls, stirring in between until smooth and creamy.  Season to taste.  Enjoy.  Serves 8

sweet potatoe and apple casserole



Ingredients:
  • 6-8 medium sweet potatoes or yams
  • 6-8 apples, sliced
  • Optional-1/4 c brown sugar (topping)
Sauce:
  • 1 cup sugar
  • 4 T corn starch
  • 1 tsp salt
  • 2 cups water
  • 1 stick of butter
·         Instructions:
·         Bake sweet potatoes until about half done.  When cool enough to handle, peel and cut into 1/2 inch slices.  Peel apples and cut into 1/4″ slices.  To make sauce, place dry ingredients in a sauce pan, then add water.   Bring mixture to a boil.  When thickened, add butter and stir until it is combined.  In a buttered casserole dish, place a layer of sweet potatoes, then a layer of apples, and cover with half the sauce.  Repeat, ending with sauce.  Sprinkle brown sugar on top, if desired.  Cover and bake at 350° until apples and potatoes are tender (about 40 minutes).  Yum!

Becky's Baked Macaroni and Cheese (from Moncia)

In a 9X13 pan add:
3 cups macaroni (not cooked)
6 T. flour
2 1/4 tsp. salt
3 c. water
3 c. milk
6 T butter
Mix and Bake at 350 for 45 minutes, then stir in 3 c. shredded cheese when the macaroni is tender.

Parmesan potato sticks

2 lb russet potatoes, peeled cut lengthwise into quarters ½ c butter, melted ½ c bread crumbs ½ c grated parmesan cheese ½ tsp salt
1/8 tsp garlic powder
1/8 tsp pepper

Cut each quarter into three strips or just stips of potatoes (they do not need to be super thin like French fries, more like steak fries) Mix bread crumbs, cheese, salt, garlic powder, and pepper in separate bowl. Roll the strips into melted butter and then in the crumbs mixture. Place in single layer in pan. Pour any remaining melted butter over potatoes. Bake 400 for 30 to 35 minutes.
