Dave Anderson Bean Dip

 2-4 cans of refried beans 

1 pint sour cream

1 block cream cheese 

1-2 cups shredded cheese 

1/2 -1 cup salsa   

Stir all together, heat, and serve

Yummy!!

Asian Style Wontons

 24 square wonton wrappers   

1 can (5 oz) chunk white chicken

1/2 c fat-free mayo

1 1/2 tsp Pantry Asian Seasoning Mix (pampered chef)

1 1 in piece of peeled fresh ginger root, pressed

1 can (8oz) sliced water chestnuts

1/4 c grated carrot

1/4 c finely diced red bell pepper

1 TBS snipped fresh cilantro or parsley

Preheat oven 350.  Press one wonton wrapper into each cup of mini muffin pan.  Lightly spray wontons with pam (vegetable oil); bake for 8-10 min until edges are light golden brown; remove from oven and from muffin pan onto cooling rack; let cool completely

In mixing bowl combine chicken, mayo, seasoning mix, gingerroot (pressed with garlic press); mix well.  Chop water chestnuts, snip cilantro; add water chestnuts, carrot, bell pepper, and cilantro to bowl and mix well.  Using small scoop fill each wonton cup with chicken mixture; optional-garnish each one with additional cilantro leaves

Summer Salsa

1/8 c valasic sliced jalapeno pepper
1/4   bunch cilantro chopped
1 medium vidalia onion chopped
1 can  (10 oz) diced tomatoes with green chillies (ROTEL)
3 cans (14.5) diced  tomatoes
1/4 c. sugar
3/4 T lawry's seasoning salt or to taste
Combine and enjoy with tortilla chips

Tauna's Corn Salsa

1-16 oz bag of frozen corn (baby, sweet, white best) (or 2.5-3 cups)
1 small sweet onion, chopped (Vidalia)
1 large can of olives, chopped
1 red bell pepper, chopped (green changes the taste)
3-5 cloves of garlic, minced (to taste)
4 large avocados, peeled & chopped (add last)

Sauce
1/3 cup of olive or vegetable oil
1/4 cup lemon juice
3 tbs vinegar (rice, white, or cider)
1 tsp dried oregano
1/4 tsp pepper
1/2 tsp salt

Make sauce and toss all ingredients together except avocados. Chill for an hour or so. It is better if it is chilled and has sat for a while. Add avocados just before serving. Serve with tortilla chips.

Tamara's Meatballs

1 can  Jellied Cranberry Sauce (16 oz.) Put on top and it melts during cooking
1 jar Chili Sauce (12 oz)
1 lg onion sliced
1 green pepper sliced
1 can pineapple chunks (20 oz)
35-50 meatballs
 Place in crock pot.  Heat on low for 3 hours.  Eat as appetizer or over rice or noodles.

Parmesan potato sticks

2 lb russet potatoes, peeled cut lengthwise into quarters ½ c butter, melted ½ c bread crumbs ½ c grated parmesan cheese ½ tsp salt
1/8 tsp garlic powder
1/8 tsp pepper

Cut each quarter into three strips or just stips of potatoes (they do not need to be super thin like French fries, more like steak fries) Mix bread crumbs, cheese, salt, garlic powder, and pepper in separate bowl. Roll the strips into melted butter and then in the crumbs mixture. Place in single layer in pan. Pour any remaining melted butter over potatoes. Bake 400 for 30 to 35 minutes.

Super Easy Delicous Salsa

1 large can tomatoes (I use diced)
1 small can tomatoes (diced with the italian flavors like oregano, etc...)
1/2 yellow onion
1 bunch cilantro tops (cut off stems)
2 tsp. sugar
2 tsp. cumin
2 tsp. salt
2 tsp. pepper
3 cloves garlic
lime juice to taste (I use probably 1/4 to 1/3 cup)

Throw all ingredients into blender. Chill atleast 1 hour but overnight is the best! Enjoy

Parmesan Potato Sticks

Ingredients:

1/2 cup grated parmesan cheese
1/2 tsp. salt
1/8 tsp. garlic powder
1/8 tsp. pepper

Instructions:
Cut each quarter into three strips (they do not need to be super thin like french fries, these are more like steak fries.) Mix bread crumbs, cheese, salt, garlic powder and pepper in a bowl. Roll the strips into melted butter and then dip into the crumb mixture covering completely. Place in single layer on pan. Pour any remaining melted butter over potatoes. Bake at 400 degrees for 30 to 35 minutes.

Garlic Cheese Bread

1 loaf French bread
8 oz shredded Colby jack cheese
3 cloves garlic finely chopped
Mayonaise
Mix cheese and garlic with enough mayonnaise to cover mixture. Slice French bread. Spread cheese mix on bread. Place on pan and bake 350 till cheese is melted, then broil to your liking!

Bacon Wrapped Smokies

1 lb lil smokies
1 pkg bacon
Brown sugar
Maple syrup (optional)

Cut bacon into quarters. Wrap bacon around lil smokie & secure with a toothpick. Put on a cookie sheet single layer. Sprinkle lil smokies with brown sugar. Drizzle lil smokies with small amount of syrup. Bake 350 for 30-40 minutes.
