meatballs

1 1/2 pounds ground beef
1egg
1/2 c. Parmesan cheese
1/4 c. bread crumbs
1 t. parsley flakes
2 T. finely chopped onions
1 clove garlic crushed
1 t. salt
1/2 t. oregano
1/2 t. sweet basil
1/8 t. pepper
Combine and shape into 18 meat balls.  Bake in oven at 400 for 18-22 minutes

Nicole's pepper steak sandwiches

 In crock-pot put

1 Sirloin tip roast
1 pkt. Italian Dressing Mix-dry, sprinkle on top-dry
1 cup water

Cook all day.
1 1/2- 2  hour before eating- shred meat, then add 1/2 jar of pepper rings or peperoncini plus 1/2 jar of juice.  Cook 1 hour.

Take steak rolls, add provolone or swiss cheese and put under broiler until melted.  Spoon on meat and enjoy.

Joe's New York Holiday Roast

Bring to room temperature about 2 hours (middle needs to be room temperature)

Preheat oven to 500 degrees.
Rub with mixture of salt, garlic powder, pepper or lawry's seasoning salt
Put in oven for 30 minutes ( no lid) (middle rack)

Turn oven to 300 degrees Bake 1- 1/2 hr.  Start checking center temperature about 30 minutes and bake until 125 degrees.    Take out when temperature  is 125 degrees (med. rare)   Tent the meat tightly with foil..  Rest for 20- 30 minutes..  This is for about a 5 pound roast.

(2 1/2 hours before planing to eat)

Quick and easy sloppy Joes

1 pound hamburger 1/4 cup green pepper finely chopped 1/2 cup finely chopped celery ,1/2 cup finely chopped onion,  1 T. fl our, 1 cup catsup ,1/2 cup water, 1/2 can tomato soup, 1/2 t. salt ,1/8 t. pepper Brown meat, add vegetables. Cook until tender about 5 minutes. Stir in flour. Add rest of ingredients.Simmer a little bit .(10 minutes or whatever you want) Serve on hamburger buns.

Shepherds Pie

1 lb Hamburger cooked with onion flakes.
Mix in 1 Can Tomato Sauce and 2 tsp Worcestershire Sauce and a little garlic salt.
Line bottom of dish with mixture.
Add 1 can of Corn and cover with mashed potatos - top with cheese.
Bake in over for 40-45 min @ 350

Rhett's stew

1 can cream of mushroom.
1 can golden cream of mushroom
1 can cream of celery
1 can tomato soup
1 envelope dry onion soup mix
2 bay leaves
Mix above 2 cups water

cube 3-6 potatoes
slice carrots
2 cans of beef or raw chunks of beef.

Cook in crock pot low 6-7 hours, or high 4-5 hours.

Beef Roast

This is from Uncle Joe

Preheat oven to 450. (this is a must). Season roast (Chuck or cross rib). Put 1 T. of oil in pan. Put roast in and put in oven for 1 hour to brown. Leave lid off. Then add carrots if you want. Turn oven to 275-300 and put lid on and bake roast about 1 hour per pound. Joe does not put any water in the meat. To make gravy, he adds water and bouillon. To thicken add flour mixture to hot but not boiling liquid. Enjoy

Pepper Steak Sandwiches

Ingredients:
1 - pkg Italian Dressing Mix (Dry)
1 - sirlion tip roast or chuck roast
1 - jar of sliced pepper rings
1 - pkg of steak rolls
1 - pkg of swiss or provolone cheese slices

Cook meat all day in crock pot with 1 cup of water and italian dressing mix. Then 1 hour before eating, shred meat and add 1/2 jar of pepper rings with juice and cook for an hour longer. Take steak rolls, add slice of cheese and melt under broiler. Then add meat and enjoy.

Stroganoff

1 lb ground beef½ onion diced2-3 cans of cream of chicken soup1 ½ - 2 cans water (or milk for more creamy)1- 1 ½ c sour creamBrown beef and onions till cooked. Add salt & pepper to taste. Add soup, water (or milk), sour cream. Mix well, bring to small boil and then simmer 20-30 minutes. Serve over rice or noodles.
