Luna Sacrament Bread - Whole Wheat Bread
6 c warm water 2 Tbsp sugar 2Tbsp yeast
Mix together and let it sit for 7 -10 minutes.
Add:
1 stick of soft butter 1 cup honey 3 eggs
Combine the following dry ingredients in a large bowl and add a little at a time to the yeast mixture: (add about 1/4 of the mixture at a time and mix in)
2 cups white flour 12 cups whole wheat flour
2 cups oats 3/4 cup non-fat dry milk
2 Tbsp. salt 1 cup ground flax seed
1/2 cup gluten
Beat until dough starts to leave the side of the bowl. Dough should still be sticky. Knead for 5 minutes (in a Bosch).
Put into a large greased bowl, cover, and let rise until doubled, about 45 minutes to an hour.
Shape into rolls, loves, or hamburger buns.
Let rise until double.
Bake loaves at 350 degrees for 30 minutes.
Bake rolls or buns at 375 degrees for about 12 minutes.
Cool on racks.
I always use eggs for rolls and buns. Eggs are optional for loaves. Eggs make a softer loaf. I add a little more whole wheat flour (1/2 -3/4 cup) when adding eggs.
